These are one of my favourite cookies and perfect to create for a morning tea with family or friends. These can also be baked without the macadamias for a nut-free lunchbox treat for the kids.
Macadamia and White Chocolate Cookies …

- 1 ¾ cups self-raising flour
- ⅔ cup castor sugar
- ½ teaspoon cinnamon
- 125g butter, melted
- 1 teaspoon vanilla extract
- 1 egg, lightly beaten
- 1 cup white choc bits
- ¾ cup macadamias, chopped coarsely
Method …
- Preheat oven to 180C/160C fan forced and line three baking trays with baking paper.
- Sift flour, sugar and cinnamon into a large bowl.
- Stir in butter, vanilla extract and egg.
- Add white chocolate and macadamias and stir through cookie mixture.
- Drop rounded tablespoons of cookie mixture onto oven trays leaving approximately 3 cm between each one to allow for spreading. This recipe will make approximately 20 cookies.
- Bake cookies in oven for approximately 14 – 15 minutes. Allow to stand on oven trays for 5 minutes then place on racks to cool completely.
- If you like, drizzle cookies with melted milk or dark chocolate and set aside to set for 30 minutes.
