Meal planning is one of my favourite things for helping me get organised. It saves me time, saves me money, definitely saves my sanity and prevents the 5.00 o’clock “What’s for Dinner” panic! It’s been a couple of weeks since I shared a Meal Plan so here’s what’s on mine for the coming week:
Monday: San Choy Bow with Fried Rice
Tuesday: Roast Chicken with roast potato, sweet potato, onion, & capsicum with steamed carrot, broccoli & gravy
Wednesday: Mexican Beef Tacos with tomato, cheese, lettuce, avocado and sour cream
Thursday: Spaghetti and Meatballs with grated cheese and cherry tomatoes
Friday: Slow Cooked Lamb Korma with rice and steamed brocolli
Saturday: Corn and Bacon Soup with crusty bread
Sunday: Risotto with chicken, mushrooms and roasted pumpkin
Fruit: Strawberries, apples, oranges and bananas
Baking: Jam Drops and Sticky Date Muffins

Sometimes I try to meal plan but it rarely works out…….I tend to plan after I’ve shopped lol which for obvious reasons doesn’t work well. The other problem I have is that I often don’t feel like cooking what I have put on the planner.
Any advice ?
Hi Dianne and welcome! I sometimes have a change of heart as well or occasionally my plans for the week change. When that happens I don’t fret too much or overthink it … I either cook something different (as long as I have all the ingredients) or better still, I give myself the night off and raid the freezer! I always plan for usually two nights of the week to cook something that’s suitable to freeze like a casserole or curry and then I have a supply of meals ready to go that I can use in any time. Add some rice, pasta and veggies and dinner’s good to go. Hope that helps!
