Pineapple and Carrot Muffins …

Pineapple and Carrot Muffins 001

I’ve really been in the mood for baking lately and trying to get a bit of a head start on morning teas when Miss 15 heads back to school. I’ve been making Banana Bread, Apple and Cinnamon Loaf, and loads of muffins including these Pineapple and Carrot Muffins. These are yummy and moist and freeze beautifully.

  1. Preheat oven to 170C and grease two standard-sized muffin trays.
  2. Sift all the dry ingredients together and then add all the remaining ingredients. Mix until just combined.
  3. Spread mixture between muffin holes and bake for 28 – 30 minutes. This recipe will make 18 muffins.

Easy as that! So tell me, are you going to do a little baking this week in preparation for when the kids go back to school and, if so, what are some of your favourite baking recipes?

  1. Muffins are my middle name and these sound tasty and pretty healthy! Will be baking. :)

    • I love baking muffins as well because they are so quick and easy and freeze so well. Stay tuned because there will be loads more recipes coming soon …

  2. It’s so good to be organised. Pineapple and carrot muffins are wonderful and what great snacks to take to school or enjoy for afternoon tea. I do try to make these sorts of goodies in advance but freezer space is a big issue! xx

    • I’m lucky enough to have plenty of freezer space Charlie, so it’s ideal when I feel like a day in the kitchen baking.

  3. I love pineapple and the idea of pairing it with carrot sounds delightful! :D

  4. Hi, loving you blog! You have self raising flour mentioned twice in this recipe . Is this a typo?

    • Hi Maz, glad you’re enjoying the blog! I had quite a few things mentioned twice which was definitely a typo! Thanks so much for picking that up … all fixed now … hope you enjoy baking these because they’re yummy!

  5. I had a really yummy recipe for something similar to this with a cream cheese icing and I lost it and cannot find it anywhere. This recipe looks similar to the one I had. Will be giving it a try thanks!!
