Banana and White Choc Chip Muffins …

Ingredients …
- 2 cups gluten-free self-raising flour
- ½ cup caster sugar
- 1 cup milk
- 1 egg
- 2 teaspoons vanilla extract
- 75g unsalted butter, melted and cooled
- 2 medium mashed bananas, (equivalent to 1 cup)
- ½ cup white choc chips
Method …
- Preheat oven to 190C and grease 12-hole muffin tray.
- Sift the flour into a bowl and stir in the caster sugar.
- Make a well in the centre.
- Put the milk, egg and vanilla in a bowl. Whisk and pour into the well.
- Add the butter, banana and choc chips. Fold until combined, the batter should be lumpy.
- Divide mixture among the muffin holes and bake for approximately 20 minutes or until lightly golden. Cool in the muffin tray for 5 minutes and then transfer to a wire rack to cool.
