I’ve been baking quite a lot lately making sure I’ve got loads of goodies in the freezer ready for lunchboxes. Here is another of my all time favourite muffin recipes … Sticky Date Muffins. These are so delicious, incredibly moist and they also freeze beautifully!
This recipe is very versatile as well because I have also served these for dessert as small puddings. Just place one muffin in a bowl, add some strawberries or raspberries to the top, dust lightly with icing sugar and serve with a small jug of Butterscotch or Caramel Sauce (I’ll share these recipes soon). Add a scoop of ice cream or a dollop of cream and dessert is ready … yum!
- 400g fresh dates, pitted and chopped
- 1 ½ cups water
- 1 ½ teaspoons bicarbonate soda
- 150g butter, softened (not melted)
- 1 ¼ cups castor sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- 1 ½ teaspoons ginger powder
- 2 ¼ cups plain flour (I used Orgran Gluten Free Plain Flour)
- Preheat oven to 165C and spray two regular-sized muffin trays.
- Place the chopped dates, water and bicarbonate soda in a small saucepan, and bring to the boil. Cook for thirty seconds, remove from heat, stir and then set aside to cool.
- Cream the butter and sugar until fluffy and pale using an electric mixer.
- Add the eggs one at a time, beating well between each egg and then add the vanilla.
- Remove the bowl from the mixer and fold in the flour, ginger powder and date mixture.
- Fill each muffin hole approximately two thirds from the top and bake for 25 – 26 minutes. This recipe will make 18 – 20 muffins.
